Delicious carrot cake recipe...Done three ways.

This carrot cake can be made into a 3 layer cake, a frosted sheet cake or as a breakfast bread. Either way, it is a must have!

A cake for all occasions

I will be making this three layer carrot cake for my son today, as it is his birthday. This cake can also be made as a sheet cake. I see no shame in serving this sheet cake for company. Add some toasted and flaked coconut on the side. Have plenty of southern sweet tea on hand and it makes for a lovely dessert for your guest.

Ingredients

2 cups flour
2 cups sugar
2 cups grated carrots
1 cup crushed pineapple
1 1/2 cups of sweetened coconut flakes (1/2 cup reserved for decoration)
2 cups walnuts (1/2 cup reserved for decoration)
1/2 cup buttermilk
1/2 cup vegetable oil
1/4 cup of butter
2 whole large eggs
2 egg yolks
2 teaspoons baking soda
2 teaspoons cinnamon
1 1/2 teaspoons salt
1 teaspoon vanilla
1 very ripe banana

I added the banana too be able to cut out some of the oil and butter in my mothers carrot cake recipe.

When I buy Banana's, at the end of the week, I always get one or two that are too brown to eat. I take those bananas and add them to a plastic bag I store in my freezer. Leaving the banana peel on.

When I'm ready to use the Banana. I let the banana thaw out in the refrigerator in a mesh strainer. Place a bowl under the strainer to catch the water.

I use the bananas for cakes and for my banana nut bread.

Let's get started!

Preheat your oven for 350 degrees.

Place your flour, baking soda, cinnamon and salt in a bowl, mix and set aside.

Grease and flour your cake pans and set aside.

Empty your 20 ounce can of crushed pineapple in a mesh strainer.

Take the back of a wooden spoon and press all the juice out that you can.

Lets get nutty

In a separate mixing bowl place oil, eggs, sugar, buttermilk, carrots, coconut, pineapple, banana and vanilla.

With your stand up mixer or a hand mixer, beat for 2 minutes on low.

Add your flour all at once and mix until the flour is well incorporated

Add your nuts, stir with a spoon.

Baking a cake

For your sheet.

Pour your batter into a greased and flour 13 x 9 cake pan.

Bake for 40 minutes or until a tooth pick is inserted and comes out clean.

For your 3 layer cake...

Evenly dispense your batter into 3 greased and floured 9 inch round cake pans.

Bake for 30 minutes or until a tooth pick is inserted and comes out clean.

Cool on a baking rack for 1 hour before icing.

To make your breakfast bread, follow the direction for your sheet cake. Skip the cooling off time and serve warm. Add a little butter and honey.

Cream cheese icing

1 1/2 cups butter
2 - 8 ounce packages of cream cheese
5 cups powdered sugar
1 Tablespoon vanilla

Allow your 1 1/2 cups of butter and 2 packages of cream cheese too come to room temperature.

Place softened butter and cream cheese in your mixing bowl. Mix on medium for 1 minute.

Turn your mixer on low and start adding your powdered sugar, one cup at a time. Allow each cup of powdered sugar to be absorbed with the butter and cream cheese, before adding the next cup.

When all your powdered sugar has been incorporated. Add your vanilla, turn your mixer on medium and beat for 2 minutes.

Lets start the icing

For your sheet cake, you will only need half of your cream cheese recipe.

Spread the icing on your sheet cake and serve.

Place the other half of your icing in a tightly sealed plastic container and place in your freezer.

When you are ready to use your icing, take it out of the freezer and allow the icing to defrost over night in the fridge.

Mix well before icing your next cake.

If you're having a lot of guest, just make two sheet cakes and you will have enough icing for both cakes.

Icing your 3 layer cake

Lay your first cake layer down on your serving dish.

Place 1/3 of your icing on the bottom layer and spread the icing on the top and the sides of your cake. Repeat with the other two layers.

Don't worry if some of the icing gets on the bottom of your serving plate. You're going to place some flaked coconut around the bottom of your cake.

Take 1/2 cup of your flaked coconut and place around the bottom of your cake.

Take 1/2 cup of chopped walnuts and place them on the top of your cake and serve.

Make someone smile

This wonderful cake will put a smile on your loved ones faces when you serve it to them.

Just as it did on my son's, on his birthday...November, 28.

It also put a smile on my face, as I watched my son dig into his huge slice of cake.

If any cake is left over, store the cake in the refrigerator. Take the cake out 30 minutes before serving.

Ditto Mark on the recipe and pictures. I'm passing this one on to Eileen. I love to cook and bake but when it comes to cakes and pies, that's her bailiwick. She likes to bake for everyone on the mountain.

Oops! I forgot to tell you that those containers are Tupperware up here on Walch's Mountain, too. I like Mason Jars too, unfortunately I don't dare build a still in one of my barns :-))

LOL Mighty, it sure is.
When I make it as a breakfast bread, it carries
me on for most the day.
With a nice cup of hot tea with honey of course.
If you do splenda, I am wanting to try this recipe using splenda.
Maybe next week.
This cake is great without the frosting.

Well din, My nickname with my son and his friends,
since they were young teens, is homeskillet.
They said to me( when they gave me the name) you're

aesoplado, if you skip the walnuts, I would add maybe another nut.
like pecans or the cake might not come out the same.
The nuts help soak up some of the wonderful liquid from all the moist ingredients.

I love carrot cakes, but I have never baked one. This recipe sounds easy. Im always buying them a Kroger grocery store. They have good ones.

Emgee, it is so simple. I think you would enjoy this very good and might I add, not all junk cake.
I have always had a hard time getting my son to eat veggies (Yes he was a, take your vitamin type of kid) and
he just loves this cake.
It has some good stuff in it.
Also make it as the breakfast bread with the honey and butter, delicious!

Hey Denise, this cake sounds amazing! can't wait to try it. Also great idea of freezing the bananas, i will definitely be trying that too. Have to say i agree with Greenfaol about courgette cake - it's very strange to look at 'cos it comes out green but tastes amazing.

I went through the recipie! Basically I am a fan more of raw carrots rather than any of the dish made out of carrots but but ur cake seems really delicious and oh God I can even smell the aroma of the baked cake its so so yummy GOD!
I must say the icing was really so very delicious cream cheese, wow!
I really would like u to give in an easy recipie of cheese cake, coz i just love it!

C, I hear ya. My mama made the best ever pot roast. I have tried to duplicate hers and to this day, I just can not do it. I too would take this as my dessert, it is healthier than most and yet so darn yummy. My kids have their own list of my goodies also. Krys hates carrot cake but, she loves my eclairs and my potato soup, she can eat it by the gallon. Marcus's is, this cake and my gumbo. Now I have a craving for fried rice.
