Grandma's Potato Scones
These Potato scones are great warm for breakfast or as a cold snack! Try them out they are simple and yummy.
I am not sure what most people think but I know that I think dessert, not breakfast food, when a person says the word scone. But these potato scones are just that breakfast food or even good as a snack. My grandmother used to make these all the time and lots of times she would double or triple the recipe and freeze the rest to use later, which is a really good idea for anyone to do. These are best to eat with bacon and eggs, instead of having bread, use potato scones that have been cooked or warmed up using the bacon grease to grease the pan. I know that sound fatening but if you drain the excess and just use a little its not that bad and still give you the flavor.
Potato Scones, Ingredients
8 ounces flour
2 ounces shortening or butter
3 teaspons baking powder
1 half taspoon salt
8ounces cook mashed potatoes
In a large bowl mix together flour, baking powder, and salt
cut in butter or shortening until mixture resembles fine bread crumbs.
Then add the potatoes, and add milk until the mxture is like pie dough.
Take out the dough and place on a floured board, divde it into 4 equal portions.
Roll out each portion into a circle like a pie, cut into four sections and lightly pierce with a fork two or three times.
Bake in a lightly greased frying pan until golden brown. Make sure pan is hot, but not on high, make it slightly lower.
Serve with bacon and eggs, or have as a snack, and enjoy!
