Homemade soup with ham and Potatoes

This is one of my favourite meals to cook at the weekends or when I get a day off through the week. It’s great for leaving alone to cook away with the occasional water adding and practically no dishes to do afterwards.
Ingredients
Ingredients
• 2 Thick cut Gammon Steaks
• 5 Baby potatoes – unpeeled and cut in half
• 5 Baby potatoes – peeled and diced
• 3 large carrots – sliced
• 1 medium leek – finely sliced
• 2 Ham stock cubes
• Half a large onion – finely chopped
• Half a mug of lentils
• Half of a small turnip – diced
Two course meal for two in one pot
Place all of the ingredients (except the unpeeled baby potato’s) into a large soup pot - add 2 pints of water & stir until the stock cubes dissolve. Bring to the boil and simmer for a further 2 hours adding water as required.
Anytime after the two hours when you are ready to serve place unpeeled baby potatoes into the soup and let them boil for around 20 mins.
Serve the soup taking care not to use the unpeeled potatoes and once ready for the main course remove the Potatoes and the Gammon and place on a heated plate and serve.
Clearing up
Congratulations you just made a two course meal in one pot !!
It looks good and it tastes fantastic!!
You now have:
Extra Soup so you can freeze this for another day.
One pot and a few plates to wash
One very happy and well-fed man
More energy and the rest of the day to yourself.

Oh, Faith, you are most assuredly a girl after my heart. I love soups-eating them and making them. Believe it or not I have a 5 crock pot full of spicy hot taco soup brewing right now out in the kitchen. I will be adding your recipe to my collection of soup recipes.
