Maple-Glazed Long Johns

These pastries are deep-fried then glazed w/ a simple maple frosting.

Ingredients

1 c. water (70 - 80 deg. F.)
1/2 c. sugar
1/4 c. shortening
1 egg, lightly beaten
1/2 tsp. salt
1/2 tsp. vanilla extract
3 c. bread flour
2 1/4 tsp. active dry yeast
Oil for deep-fat frying

Glaze:
2 c. confectioners' sugar
1/4 c. half n half cream
1 tbsp. maple flavoring

Method

In bread machine pan, place 1st 8 ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 min. of mixing; add 1 - 2 tbsp. water or flour if needed).

When cycle is completed, turn dough onto lightly floured surface. Divide into 4 portions. Roll ea. into 12x5" rectangle. Cut ea. rectangle width-wise into 1 1/2" strips.

In electric skillet or deep-fat fryer, heat oil to 375 deg. F. Drop dough strip, a few @ at time, into hot oil. Turn w/ slotted spoon & fry for 1 min. on ea. side or til golden brown. Drain on paper towels.

In sm. bowl, combine glaze ingredients. Place long johns on wire rack; drizzle w/ glaze.

Yield: about 2 1/2 doz.

Note: If your bread machine has a time-delay feature, it is recommended not to use it for this recipe.
