My Pancake Day.
In England we celebrate pancake day every year, but this year we did something a little bit different by having a three course meal with each course containing pancakes.
Chicken & Pancake Soup.
Fill a saucepan up with 2 pints of seasoned chicken stock. Thinly slice one large onion and drop into the stock.
Clean and peel one large carrot, dice and drop into the stock.
Shred one cooked chicken breast, chop up 2 thinly cooked panckes, dice one large potato and drop all three into the stock.
Bring the stock to the boil and then let it simmer until the carrot is tender making sure you keep the soup covered.
Serve with crispy bacon pieces.
Fry half a pound of lean minced steak with a finely chopped onionin a large open frying pan.
When browned off add one teaspoon of mild curry powder and stir in.
Add half a pint of seasoned beef stock.
Add 2 tablespoons of tomato puree
Simmer until mince is of a thick nature.
Add half a pound of cooked rice.
Place the mixture diagonally accross the pancke and fold the pancake into a roll.
Warm the pancakes gently through in a low heated oven.
Serve with saute` potatoes and garden peas.
Banana Choc Pancake.
Place an open pancake on a plate.
Cover with sliced bananas.
Melt a 8oz bar of milk chocolate over hot water adding a touch of milk.
When choolate is smooth and runny, pour over the bananas.
Sprinkle with chopped nuts.
Serve with a dollop of whipped double cream.
