Red Pepper Wheat Rolls

Bread making only looks complicated. Taken step by step and in stages, it is actually a very easy process. These Whole Wheat Red Pepper Rolls are hearty with a slight edge to them. They would go great with red wine and a cheese and fruit platter or steak and potatoes.
Recipe Information
You will need:
- 1 large glass bowl
- 1 wooden spoon
- 1 baking dish or cookie sheet
- measuring cups and spoons
Recipe makes 8 rolls.
Bread making is a fairly easy process. There are several stages in which the ingredients need time to work together, allowing you time to do other things. Once you become familiar with the process, you may find yourself making bread quite often. Dinner bread can be started as late as 2 or 3 in the afternoon. While the ingredients are doing their thing, you can be preparing the rest of your meal. I do it all the time, and my family couldn't be happier.
I prefer to use only one large bowl. You may find it easier to use 2 or more. I leave my dough on the counter while I wash the bowl between steps. This saves space and makes it easier to clean up my mess later.
Before I begin making bread, I thoroughly clean my counter top. I wash it with a soapy dishcloth and rinse it well. Personally, I prefer kneading bread right on the counter, as opposed to a wooden board. This also makes clean up easier.
You can use a plastic bowl if necessary. Glass is best because it doesn't interfere with the chemical processes taking place throughout the recipe.
Preparation Time:
- Stage 1: 10 minutes
- Stage 2: 15 minutes
- Stage 3: 10 minutes
- Stage 4: 90 minutes
- Stage 5: 30 minutes
Between stage 4 and 5, preheat oven to 350 degrees Fahrenheit.
Ingredients
- 2 teaspoons yeast
- 1 1/2 cup warm (not hot) water
- 1 1/2 teaspoon honey
- 1 egg
- 1 teaspoon salt
- 1 teaspoon red pepper flakes
- 1 Tablespoon oil
- 2 cups whole wheat flour
- 1 cup white flour
- 3/4 cups white flour for kneading
Yeast is sold in tiny packets and in jars. It is easier and possibly cheaper too, to purchase yeast in jars. Be sure to check the "Use by" date on the label. In most cases you should find that you have at least a year to use it.
Any type of oil may be used. For this recipe, I prefer a mild oil like canola or extra virgin olive oil. However, you can use corn oil, peanut oil and even pepper flavored oil if you'd like. In a pinch, you can melt shortening or butter as a substitute for the oil too.
Bread Making Process
Stage 1
Activate Yeast
- Put yeast in bottom of large bowl.
- Pour warm water over yeast and add honey.
- Let yeast mixture sit for 5 to 10 minutes. Yeast will feed on honey and create a foam on top of the water.
Stage 2
Combine Ingredients
- Add egg salt, red pepper flakes and oil to ingredients in bowl. Mix well with a wooden spoon.
- Add 2 cups wheat flour and 1 cup white flour. Mix until a sticky batter forms.
- Pour 1/2 cup remaining flour on countertop. Spread it out and put batter in the center of it. Sprinkle the top with a little bit of flour.
Stage 3
Knead Dough
- Starting at the top, pull bread toward you and turn batter 1/4 turn to the left, incorporating more flour as you work. Continue in this manner until you use up as much of remaining flour as you can. You should have a flexibly firm dough when you are done.
- Let dough sit on the counter for a moment while you wash your bowl.
- Grease your clean bowl and place dough in it. Flip it over once and cover with plastic wrap or a cotton towel.
Stage 4
Let Dough Rise
- Let dough rise for 60 to 80 minutes at room temperature until it has doubled in size. This assumes that your home is kept warm and free from cold drafts.
- Press on the top of the risen dough. It should immediately release excess air. Let it rest for 2 to 3 minutes.
- Spray baking pan with non-stick. If you don't have non-stick spray, you can lightly grease it.
Stage 5
Shape and Bake Rolls
- Lightly flour hands and make 8 equal sized rolls. Place in baking dish.
- Mix egg with 1 teaspoon cold water and lightly brush tops of rolls.
- Bake for approximately 20 minutes. Remove to wire rack and serve with butter.

Hi MJJ-Whenever I visit a page like this one it costs me a lot 'cause this makes me hungry and I have to rush to the kitchen.hmmm seems pretty yummy.

Oh, it's real good, and you can cut the rolls in half and melt cheese on top too. Serve with fresh fruit and you have a wonderful light lunch:)
