sausage & veggies

Very easy to make.

Ingredients


1 lb. cut up link sausage.
1 lb. brocolla.
2 tablespoon margarine.
4 head of corn.
2 large onions- sliced.
dash of salt black pepper.

Directions

Add all ingredients to a deep frying pan and cook on low heat until everything is cooked all the way through. Serve hot and enjoy.

Total Time: 55 Min

chicken stew

Chicken and vegetable stew.

Ingredients

2-4 chopped carrots
1 can kidney beans
1 can lima beans
1 can green beans
1 can pinto beans
1 can corn
2-4 stalks chopped celery
1 medium onion, chopped
16oz bag cooked chicken strips
3 bouillon cubes
1 can Italian stewed tomatoes
1/4 cup A-1 steak sauce
1 packet vegetable soup mix
1 packet chili mix

Directions

Combine all ingredients in large pan. Add 4 glasses of water and simmer for 1 hour. Makes 8 bowls of stew.

bayou burgers w/ spicy remoulade

Prep/Total Time: 30 min.
Yield: 4 Servings


Ingredients

1 small onion, chopped
2 tablespoons olive oil
1/4 pound fully cooked andouille sausage link, casing removed, finely chopped
1 teaspoon Creole seasoning
3/4 teaspoon garlic powder, divided
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound ground turkey
1/4 pound Italian turkey sausage link, casing removed
4 slices cheddar cheese
1/2 cup Miracle Whip
2 tablespoons lemon juice
1 tablespoon hot pepper sauce
2 teaspoons sweet pickle relish
1 teaspoon capers, drained
4 kaiser rolls, split
1 tablespoon butter

Directions

In a large skillet, saute onion in oil until tender. Add andouille sausage; cook 1 minute longer. Transfer to a large bowl. Stir in the Creole seasoning, 1/4 teaspoon garlic powder, salt and pepper. Crumble turkey and turkey sausage over mixture and mix well. Shape into four patties.

In a large skillet over medium heat, cook burgers for 5-7 minutes on each side or until a meat thermometer reads 165° and juices run clear. Top with cheese; cover and cook for 1-2 minutes or until cheese is melted.

For remoulade, in a small bowl, combine the Miracle Whip, lemon juice, pepper sauce, relish and capers. Spread rolls with butter and sprinkle with remaining garlic powder. Broil 4 in. from the heat for 2-3 minutes or until lightly browned. Serve burgers on rolls with remoulade. Yield: 4 servings.

Note: The following spices may be substituted for 1 teaspoon Creole seasoning: 1/4 teaspoon each salt, garlic powder and paprika; and a pinch each of dried thyme, ground cumin and cayenne pepper.

chili-spiced pork chops

Prep/Total Time: 30 min.
Yield: 6 Servings


Ingredients

3/4 cup seasoned bread crumbs
3 tablespoons chili powder
1/2 teaspoon seasoned salt
1 egg
1/4 cup fat-free milk
6 bone-in pork rib chops (7 ounces each, 3/4 inch thick)

Directions

In a shallow bowl, combine the bread crumbs, chili powder and seasoned salt. In another shallow bowl, combine the egg and milk. Dip chops in egg mixture, then coat with crumbs.

Transfer to a 15-in. x 10-in. x 1-in. baking pan coated with cooking spray. Bake at 350° for 20-25 minutes or until meat thermometer reads 160°. Yield: 6 servings.

Nutritional Facts 1 pork chop equals 299 calories, 12 g fat (4 g saturated fat), 120 mg cholesterol, 448 mg sodium, 12 g carbohydrate, 1 g fiber, 34 g protein. Diabetic Exchanges: 4 lean meat, 1 starch.

burgundy beef

Prep: 20 min. Cook: 8 hours
Yield: 6 Servings


Ingredients

1/2 pound sliced fresh mushrooms
1/2 pound fresh baby carrots
1 medium green pepper, julienned
1 boneless beef chuck roast (2-1/2 pounds)
1 can (10-3/4 ounces) condensed golden mushroom soup, undiluted
1/4 cup Burgundy wine or beef broth
1 tablespoon Worcestershire sauce
1 envelope onion soup mix
1/4 teaspoon pepper
2 to 3 tablespoons cornstarch
2 tablespoons cold water
Hot cooked wide egg noodles

Directions

In a 5-qt. slow cooker, combine the mushrooms, carrots and green pepper; place roast on top. In a small bowl, combine the soup, wine, Worcestershire sauce, soup mix and pepper; pour over roast. Cover and cook on low for 8-9 hours or until meat is tender.

Transfer roast and vegetables to a serving platter; keep warm. Strain cooking juices and skim fat; place in a large saucepan.

Combine cornstarch and cold water until smooth; gradually stir into cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with the beef, vegetables and noodles. Yield: 6 servings.

savory sausage penne supper

Savory Sausage Penne Supper Recipe

Prep/Total Time: 30 min.
Yield: 6 Servings

Ingredients

1 package (16 ounces) penne pasta
1 can (15 ounces) tomato sauce
1 jar (7 ounces) roasted sweet red peppers, drained
1 medium onion, cut into wedges
1 tablespoon olive oil
2 garlic cloves, peeled
2 teaspoons balsamic vinegar
1 teaspoon sugar
1 teaspoon Italian seasoning
1/2 teaspoon ground coriander
1/2 teaspoon fennel seed
1/4 teaspoon garlic salt
1 pound bulk Johnsonville® Ground Sausage
1/3 cup shredded Parmesan cheese
1/4 cup minced fresh basil

Directions

Cook pasta according to package directions. Meanwhile, place the tomato sauce, red peppers, onion, oil, garlic, vinegar, sugar, Italian seasoning, coriander, fennel seed and garlic salt in a food processor; cover and process until blended. Set aside.

In a large skillet, cook sausage over medium heat until no longer pink; drain. Add tomato mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes or until slightly thickened.

Drain pasta; toss with sauce. Sprinkle with cheese and basil. Yield: 6 servings.

chicken & dumplings

Prep/Total Time: 30 min.
Yield: 6 Servings


Ingredients

6 individually frozen biscuits
1/4 cup chopped onion
1/4 cup chopped green pepper
1 tablespoon olive oil
4 cups shredded rotisserie chicken
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1 can (4 ounces) mushroom stems and pieces, drained
1 teaspoon chicken bouillon granules
1 teaspoon minced fresh parsley
1/2 teaspoon dried sage leaves
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon pepper

Directions

Cut each biscuit into fourths; set aside. In a large saucepan, saute onion and green pepper in oil until tender. Stir in the chicken, broth, mushrooms, bouillon granules, parsley, sage, rosemary and pepper.

Bring to a boil. Reduce heat; add biscuits for dumplings. Cover and simmer for 10 minutes or until a toothpick inserted near the center of a dumpling comes out clean (do not lift cover while simmering). Yield: 6 servings.

Nutritional Facts 1-1/2 cups equals 417 calories, 20 g fat (5 g saturated fat), 83 mg cholesterol, 1,285 mg sodium, 25 g carbohydrate, 2 g fiber, 33 g protein.

easy simple chicken

Very easy and affordable!

Ingredients

chicken breasts or thighs. 2-4 pieces per pkg.
2 Tbs. butter
1 sm. yellow onion
1 part vinegar
2 parts water
salt & pepper to taste

Directions

In a hot skillet, add water, vinegar & chicken and bring to a boil. Once this occurs, turn heat down to med. & let simmer for approx. 15min. Next, while chicken is simmering, slice the onion, and add to chicken, along with the butter, adding salt & pepper to taste.

Prep Time: 5 Min
Cook Time: 20 Min
Total Time: 25 Min

cinnamon biscuits

Easy and fast sweets.

Ingredients

2 cans cheap biscuits
1 TBSP cinnamon
1 stick butter
1/4 cup sugar

Directions

Melt butter in 8-inch cast iron skillet. Add cinnamon and sugar; stir until mixed. Start dipping biscuits on both sides and going around skillet half on top of the other to look pretty. Bake as directed on can in the skillet. If you want add diced apples to the mix, cook them until almost tender before adding the biscuits. Prep time: 5 minutes. Baking time: 10 to 15 minutes (with apples add an extra 5-10 minutes). Serves about 10, but with my family it's gone in a few minutes!

easy cherry cheesecake

A very tasty and simple desert that your family will love.

Ingredients

1 graham cracker crust
8 oz package of Philly cream cheese
1 package (dry) Dream Whip
6 heaping tablespoons confectionary sugar
Approx. 1/8 cup of milk **Just enough to mix everything and mixture should be fairly thick.

Directions

Use a graham cracker pie crust. Filling: Beat the following ingredients all together in large bowl. (1) 8 oz. package Philadelphia Creamed cheese, 1 package (dry) Dream Whip, 6 heaping tablespoons. confectionary sugar, just enough milk to milk to mix well and beat everything for about 3 minutes. If mixture is too thin just add a little extra confectionary sugar. Pour into graham cracker crust. Top with a can of cherry pie filling. Refrigerate for several hours before serving. I get tons of compliments every time I make it. Delicious and very quick & easy.

easy no bake cheesecake

Simple and easy to make cheesecake No baking required.

Ingredients

8 oz Cream Cheese Softened
8 oz Sour Cream
8 oz Cool Whip
1/3 cup Sugar
1 tsp Vanilla
1 graham cracker pie crust

Directions

Mix softened cream cheese, sour cream, sugar, and vanilla on low until well blended. Fold in cool whip. Pour mixture into graham cracker pie crust and chill.

Servings: 8

Oh geesh 'dream whip', that is a blast from the past. Mama used it for some of her desserts, I just have not thought about it for a few, maybe I need to. Nice selection once again. As always, thank you for sharing.:)
