Here is a quick recipe for a delicious dessert for those who don't have a lot of time to spend in the kitchen.

A quick dessert, cooked in the Microwave

I usually cook sponges in the oven, as they rise and turn golden brown, but this dessert is best cooked in the microwave, and makes a delicious and filling dessert. It doesn’t need to rise, as it has a layer of fruit underneath it.

INGREDIENTS

100 GRAMS OF BUTTER

100 GRAMS OF SUGAR

1 LARGE EGG

PINCH OF SALT

200 GRAMS OF FLOUR

ANY FRUIT, EITHER TINNED, OR SLICED FRESHLY, SUCH AS APPLES OR PEARS. ENOUGH TO FILL HALF WAY THE MICROWAVE BOWL YOU ARE USING.:

METHOD


Cream the butter and sugar together with a wooden spoon. Gradually add the egg, beating all the time, and then the pinch of salt. Sieve the flour, then fold in lightly. Spoon the mixture over the fruit. Put in the microwave, and cook on full power for 8 minutes.

If you like your apples crunchy,do not precook them, or blackberries, the time in the microwave will be long enough.

The result will be a nice springy sponge, but don’t use too much juice from the fruit because it will seep through.

Enjoy it with custard, cream,or ice cream.

Serves 4 to 6 people.
