Easily prepared and so versatile and economical.This dish, feeds the whole family and can be prepared all year round, simply substitute Summer salads for hot cooked veggies or fresh bread.

Versatile And Tasty

This is not the regular brawn with the "yucky" bits, the only meat I use is a large pork shank, either plain or smoked.four chopped medium size potatoes, one large chopped onion, two hard boiled eggs, a cup of drained, soft cooked beans (any variety), a diced carrot, one chopped green chilly or a teaspoon of dried chilly powder a couple of dried bay leaves, salt, black pepper, a clove of fresh garlic and a chicken stock cube .


1. Roast a medium to large pork shank in a medium oven until golden brown, leaving the skin or "crackling" on.
2. Put the shank into a steam cooker, cover with water and add the Bay-leaves, chopped onion, chopped green chilly or teaspoon of chilly powder garlic, chicken stock cube, salt and pepper . Cover the pot and steam cook until the meat comes of the bone.

Note: The cooking time varies according to the size of the shank.

3. Once the meat is soft, remove the bones and cut the meat and crackling into small pieces.
Add the cooked beans, cooked potatoes and diced carrots to the meat in the cooker. Make sure that the liquid covers the contents, add water if needed. and cook the contents until the vegetables are soft but firm.
Remove from heat.

4. Take a large shallow, flat bottomed dish and carefully spoon the chopped, boiled eggs into the dish and spread in an even layer. Carefully ladle the brawn mixture into the dish. the depth of the liquid in the dish must be about 25mm. to 30 mm., Cover with a cloth and allow to cool. Then place in fridge until the liquid is set firm cut into squares and serve with a fresh salad of your choice.

This quantity serves 6 to 8 people,and should be returned to the fridge where it will keep well. Simply place into an airtight container to avoid moisture loss.

It is a very tasty and economical dish which can be eaten all year round, in cooler weather simply replace salads with hot cooked veggies or serve with fresh bread or cheese. I have been making this dish for friends and family for many years as it's versatility makes it a hot favorite.
The meat can be substituted with roasted chicken or turkey and may require a pinch of added gelatin to enhance the setting action.
