Butternut Squash Soup- A Great Addition to a Dinner Menu.

I admit it, the word squash tends to bring up memories of my parents forcing me to eat some pale orange or yellow looking pile of mush on my plate back when I was a child. Oh how I wish I had been introduced to the butternut squash a lot earlier! Here's a delicious soup that is sure to become a regular at your house.

Butternut Squash Soup

This is a pretty easy recipe when it comes right down to it. The beauty of it is that if you serve it to someone they'll think that you spent hours slaving over this dish when in reality you should be able to put this on the table in less than a half hour.


1 butternut squash
1- 1 1/2 cups of chicken stock (vegetable stock would work as well)
A few tablespoons of olive oil
1 potato
1 cup milk (or cream is a richer soup is desired)


1.) Peel the butternut squash and the potato and cut them up into cubes. 1inch by 1 inch should be about right, but it really isn't that important.
*(hint) The potato peeler also works great when it comes to peeling the squash

2.) Heat up the olive oil at about a medium heat in a reasonalbly size pot and add your squash and potato cubes

3.) Allow the squash and potato to soften somewhat and carmelize a bit on the bottom

4.) Add the stock being sure to scrape up the carmelized bits on the bottom of the pot

5.) Allow the mixture to simmer on a lower heat setting until the squash and potato are thoroughly softened.

6.) Once the squash and potato are soft, you need to blend them into the stock. To do this I would recommend a hand blender, or pouring the mixture into a stand blender to puree, however, if you don't want to do this, giving the entire mixture a real good once over with a potato masher will also do the trick.

7.) Stir in the milk (or cream)

8.) Add salt and pepper to your individual taste

To make this a real decadent soup you may want to consider dribbling a small amount of truffle infused oil onto the soup after ladeling it out to add an extra bit of flavour.
