Carrot Cake

A perfect recipe for Carrot Cake. Delicious, moist and goes fantastically with coffee or after a light meal.


2 cups Self Raising Flour
2 Cups Sugar
1 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Cinnamon
½ cup Raisins

4 Eggs
1 Cup Cooking Oil
3 Cups Shredded Carrot


To begin - grease an 8' inch square pan and line the bottom with baking parchment.

Blend all the dry ingredients together in a bowl, whisking vigorously with a ballon whisk to omit any lumps. Break the eggs into a jug and whisk lightly, adding the oil after this step. Grate the carrots, I find a food processor with a shredding blade easiest.

Combine all the ingredients together, taking care not to over-beat. Pour into the prepared pan.

Bake for 30-40 minutes (depending on your oven) and remove when a toothpick inserted in the middle comes out clean.

Leave to cool in the tin for five minutes then transfer to a wired rack to cool.

You can now leave it as it is or sprinkle over some icing sugar, this is down to personal preference.
