Cheesy Baked Potato

With a little forethought you can create a quick, easy, and very tasty baked potato snack,

Decide on how many potatoes to bake....

I usually cook the Sunday roast which means that the oven is on for at least an hour. I usually choose four nice sized potatoes, one per person, give them a good scrub, the potatoes that is - not the persons! and pop these in a tray in the oven for the same time as the meat cooks.

I take the roast out of the oven when it is cooked, turn the oven off and leave the potatoes in there as the oven cools down. I then take the potatoes out of the oven and leave them somewhere on the side until I need them for a snack sometime during the following week.

A Baked Potato

There is nothing as comforting as a warmed baked potato skin filled with a variety of fillings to cheer you up on a cold Winter's day....

Snack time...

When we want a snack, I put the potatoes on a chopping board and cut the potatoes longways in half. Taking care to cut right the way through the skins

Scooping out the insides

I then carefully scoop out all the insides of the potatoes. I find that a small spoon works well to scoop out the potatoes. Take care to leave the skins intact, as they will be used to hold the finished mixture.

Mixing up the potatoes

I then put them all into a mixing bowl and mix up the potatoes with a fork, adding a little butter and milk to make them moist and creamy, the potatoes do not necessarily need to be mashed completely.

Adding Extras...

I then look in the fridge to see what is in there that I can use to mix in with the potatoes. Examples I have used in the past include:- cooked ham, red/green/yellow peppers, mushrooms (fried), bacon (fried/grillled), spring onions..etc. Remembering that they all need to be cut up quite small. I sometimes fry them all together in a little oil in a frying pan

The ingredients are then mixed in with the potatoes in the mixing bowl. This is the time to add salt and peeper, to taste, into the mixing bowl .

Refilling the potato Skins

I then put the potato skins on a tray and fill them with the mixture. You will find that the mixture will be piled up as there is now much more of it than the original quantity of potato.

Ready for grilling

I then top the potatoes with grated cheese and pop them under a medium grill for about 15 minutes. By then the cheese will be melted and the potatoes should be warmed right the way through.

Enjoy!

I then serve them on a plate with some fresh salad and mayonnaise.... The potato skins are crispy and delicious to eat too.....enjoy!!

Aww lovely article. Mum used to do hers like this for Sunday tea. I can smell them cooking now. Sunday was her baking day.
