Chicken Enchilada with Jalapeno Recipe

Enchiladas make a great meal. You can use chicken, pork, beef and cheese for the filling. The Jalapeno give this enchilada recipe a different flare.

Chicken Enchilada with Jalapeno Recipe

Enchiladas are sometimes considered comfort food. You can make a meal of these chicken enchiladas and they are fast and easy to make.

Ingredients for Enchilada Recipe

Ingredients:
1. 2 jars (23 ounces) enchilada sauce, divided
2. 1 cup Pico de Gallo
3. 2 cups shredded rotisserie chicken ( you can use any type of cooked chicken)
4. 1 can (4 ounces) diced green chilies
5. 1 Can (2.25 ounces) sliced olives with red jalapeno, drained
6. 2 cups shredded jack cheese, divided
7. 12 corn tortillas
8. Optional toppings you can use are guacamole and sliced green onions

Jalapeno Cream

1. ½ cup light sour cream
2. 2 to 3 tablespoons minced pickled jalapeno peppers
Stir the sour cream and jalapeno peppers together in a bowl.

Directions for Enchilada Recipe

Preheat oven to 400 degrees. Place enough enchilada sauce in two 9 inch baking dishes to coat the bottom.
1. Cook Pico de Gallo in a large nonstick skillet over medium heat for about 5 minutes. Stir in chicken, green chilies and olives and cook for a few minutes more to heat through.
2. 3. Place about 1/3 cup of mixture in the center of each tortilla and top with cheese. Roll up tightly and place seam side down in the prepared dish. Pour sauce over the top and sprinkle with remaining cheese. Bake for 25 to 30 minutes or until hot and bubbly. Serve with guacamole, green onions and Jalapeno Cream.
