Chocolate Cake Doughnuts

A midnight black bittersweet doughnut with a dash of cinnamon that will make you crave for more.

Chocolate Cake Doughnuts

1 tsp salt
1 large egg
3 large egg yolks
1 tsp baking soda
3/4 cup buttermilk
2 tbsps whole milk
1 tsp vanilla extract
1/3 cup vegetable oil
2 tsps baking powder
1 cup granulated sugar
3 cups all purpose flour
Vegetable oil (for frying)
1/4 tsp ground cinnamon
1 cup confectioners' sugar
1 cup unsweetened cocoa powder

  1. In a mixing bowl, mix together 1 cup flour, cocoa powder, granulated sugar, baking powder, baking soda, ground cinnamon and salt.
  2. Add in the egg and the egg yolks and mix well (hand/stand mixer).
    Add the buttermilk, vanilla and oil. Mix until well combined.
    Add the remaining 2 cups of flour and mix until just barely combined.

  3. Line your counter with a sheet of parchment paper and scrape the dough onto it. Cover it with another sheet of parchment paper.
  4. Flatten and roll the dough into 1/2 inch thick using a rolling pin.
    Place the dough into the refrigerator and let it sit for around 30 minutes to an hour.

  5. Combine the confectioners sugar and the whole milk and whisk together until smooth. Set aside.

  6. Heat at least 2 inches (high) of vegetable oil in a deep pot or fryer until the thermometer reaches 370 degree Fahrenheit. Prepare a baking sheet lined with kitchen or paper towels and baking sheet dusted with flour.

  7. Remove the parchment paper from the dough and dust it with flour. Using a round biscuit cutter or doughnut cutter, cut the dough into 3 inches round and place them on the baking sheet dusted with flour.

  8. Fry the doughnuts for about 1 to 2 minutes per side. Drain on the prepared kitchen/paper towel.

  9. While the doughnuts are still warm, dip them into the glaze on both sides and place them into a wire rack to set.

  10. Serve and Enjoy!

Tips and Tricks!
Store the doughnuts into room temperature. It will last for 2 days.
Store the glaze into the refrigerator. It will last for 4 days.
