Chunky Nut Granola

Granola is something that I always like to have on hand. I use it to put on my yogurt, ice cream, with almond milk or just by itself as a snack.

I like this recipe because it's easy to make the granola stay in large pieces to eat or big chunks for cereal.

Chunky Nut Granola Recipe

4 C rolled oats
1 3/4 C shredded coconut (unsweetened or sweetened for more sweetness)
2 1/4 C mixed nuts and/or seeds
1/2 C olive oil
3/4 C honey
1 tsp vanilla extract
salt to taste

Preheat the oven to 350F.
In a large bowl, combine oats, coconut and nuts.
In a separate bowl, combine oil, honey and vanilla. Warm in the microwave and whisk together. Warming it will make it easier to mix with the oats mixture. Pour the oil mixture over the oats mixture and stir together until coated.
Next, spread it all out onto a rimmed baking sheet. Sprinkle with salt. Bake for 20 minutes. Remove from the oven and mix. Push it down starting in the center out to the edges. Return it to the oven and bake for about another 8 - 10 minutes. Watch it carefully the last few minutes to make sure it doesn't burn. Remove it from the oven. Let it cool completely in the pan.

Notes

After you have made this recipe, you will be able to make adjustments for your own personal sweetness. I tend to not like my granola super sweet. Usually, I use 1/2 unsweetened coconut and 1/2 sweetened. This is an easy adjustment to make it taste exactly how you like it.
I like to use a good mix of raw nuts and seeds for my nut mixture. I really like almonds so, I use a lot of raw almonds and some sliced almonds too. I usually have sunflower seeds and/or pumpkin seeds to add to the nut mixture. To finish it off, I like to use some walnuts. This is my favorite nut mixture but you can use your favorites to make this granola perfect for you.
