Corned Beef Sandwich: Honey, Ground Mustard & Grape seed oil, Slaw

I know when most people think of a corned beef sandwich, their first thought is usually a reuben sandwich but, there are so many more combinations that fit this piece of beef. This is my take and it is delicious.

Reuben but Not!

My husband loves a reuben sandwich, if we go out to eat for deli food, he usually orders one. The sweet, salty and a bit of sweetness that comes from the thousand island, just hits my pallet with all the tastes that make my taste bud sing. I always have to take a bite and every time I am disappointed.

I like a bit of sour but, I have a low tolerance for sour foods and so the sauerkraut is a bit over powering for me. Also, I have never been a fan of thousand island dressing and the cheese (to me) adds nothing but, empty calories.

So, since I do like these flavors that make my taste buds sing but, not in the combination that a reuben sandwich delivers.

I decided to make my own sandwich that is, (taste) like a reuben but, it is not.

Ingredients

This will make at least four hearty sandwiches.

2 Lbs. Corned beef (more if would like)
1/2 small head of cabbage
3 tomatoes
1/3 cup grape seed oil
2 tablespoons ground mustard
1/2 teaspoon of honey
1/4 teaspoon cracked black pepper
2 teaspoons *kosher salt

I use rye bread but, use the bread of your choice.

*You will use this salt to sprinkle over your cabbage.

Get Ready

In a small bowl, add your grape seed oil, ground mustard, honey and cracked black pepper. Mix until it is well incorporated, set aside.

Slice your tomatoes, place on a plate and set aside.

Cut your cabbage very thinly and place in a colander, with a bowl underneath. Sprinkle the cabbage with salt, mix well and allow them to drain for 30 minutes.

Rinse your cabbage and dry with a towel until the cabbage is completely dry. If you skip this step, you will have cabbage that is not only too salty but also, if the water is left on, it will dilute your dressing.

After your cabbage is dried, toss with your mustard dressing.

Meat

If you either choose deli corned beef or decide to make your own. Make sure your corned beef is cut very thin.

You seem to get a better taste from the beef and with this cut, a lot goes a long way.

Also if you are making your own, only cut the meat as you need it, or it might dry out.

Your Choice!

This is how I fix my sandwich...

Two pieces of marble rye bread, I stack on the corned beef and I am not shy.

Throw a few tomatoes on top. Then I top it with my slaw.

My husband likes his with a little bit of miracle whip on one side.

My brother adds mayonnaise to his sandwich.

Use your imagination, add what you like.

I am sure you will not be disappointed with your sandwich when you take that first bite.

Bite Me!

Now this is my own sandwich in all its glory and it tastes darn good, might I add. The slaw is also good on a grilled chicken sandwich or a great topping for most vegetarian sandwiches. I have even added grated carrots to this slaw and topped it on a avocado and avocado sandwich, perfect match.

I'd like that sandwich now Denise ..please... I have been out clearing the "down trees"-( the small ones) from our lot...every spring a big project after winter's winds!...it is in the high 60's here and so beautiful...there is nothing like physical labor in the outdoors to make you hungry, two of those delicious sandwiches for me please and darn with calories-yum...LOL!

Have never heard of a Rueben Sandwich before so that was new on me Denise! This has made me salivate!! lol..It is the early hours of the morning and I want to make myself a sandwich just like this! Woman, you are just sooo bad at tempting me like this..LOL! \0/xxx
