Easy Baking: Filipino Style Coconut Macaroons

Homemade delightful Filipino Style Coconut Macaroons that are moist, sweet and chewy on the inside yet crispy on the outside is an irresistible thing. Gluten free and is a favorite food during Passover.

Easy Baking: Filipino Style Coconut Macaroons

    Ingredients and Procedure:

  1. Preheat your oven into 350 degree Fahrenheit. Grease with oil your mini cupcake/muffin pan and line it with mini cupcake/muffin liner. Set aside.

  2. In a large mixing bowl, beat 3 eggs until frothy.

  3. Add in 1/2 cup of granulated sugar and 1/4 cup softened butter, continue beating.

  4. Add 1 can of condensed milk and 1 teaspoon vanilla, beat until well blended.

  5. Add in 4 cups of desiccated coconut and a pinch of salt, mix using a spatula.

  6. Scoop out small portions of the batter and place into the prepared pan.

  7. Bake for 14 minutes.

  8. Remove from the oven and brush the top with melted butter. Serve.

    Tips and Tricks!
  • Subtracting the amount of desiccated coconut will make your macaroons more chewy and soft, while adding more desiccated coconuts will make it crispier.
  • If you don't have mini muffin/cupcake pan, you can just form the mixture into balls and place into a well greased baking sheet.
  • You can keep coconut macaroons into an airtight container for weeks.
