A perfect Eggless Pancake for breakfast on lazy Sundays. Nutritious, healthy, low in sugar, no butter with lots of fresh milk. Suitable for vegetarians and non-vegetarians too. Goes well with honey toppings

Eggless Pancake for Breakfast

I was out of eggs today.

Not planning to head to the store yet until my grocery list is full and lengthy.

Hence, I decided to make Eggless Pancake for breakfast today since I am out of bread too!

Firstly, this pancake batter is rather thick than the usual pancakes because it has more flour and eggless.

You needn't sieve the dry ingredients at all. Just dump all the ingredients into a big mixing bowl and start stirring.

Hence, you may need to add in more milk to it and to keep stirring until the batter dissolves easily.

I would prefer to use warm milk because it helps to dilute the flour easily rather than using the cold milk.

You can use your baby formula powder milk or adults powder milk mix with warm water. It is healthy and nutritious compare to using condense or full cream sweetened milk.

However, do ensure that the milk powder is thoroughly diluted into the warm water.

Do not allow any lumps of powder milk to surface on top.

How To Make Eggless Pancakes

Ingredients

  • 1 cup All purpose flour
  • 1 cup Milk powder mixed with warm water
  • 1 tbsp white sugar
  • 1 tbsp corn oil or melted butter
  • 1 tbsp baking powder
  • Honey/ jam/ peanut butter / butter for toppings

Method of cooking:

  1. Sieve flour and baking powder in a bowl.
  2. Make a hole in the centre.
  3. Pour in milk and oil.
  4. Stir well.
  5. It will form a sticky thick batter.
  6. Heat up pan with a little butter
  7. Pour one scoop of pancake batter into the pan.
  8. Cook until both sides turn brownish.
  9. Drizzle honey or your favorite jam on top.

  10. Makes around 8 pancakes

I love to spread peanut butter or KAYA ( coconut screwpine jam ) onto these pancakes. My kids prefer to have them plain but with crispy edges.

I tried them yesterday morning and I thought they might be heavy because of the batter being a little sticky, I used the almond milk. I cooked them with blueberries, then I put strawberries and syrup and applesauce on them and they were the best, fluffiest, lightest, yummiest pancake. Thank you so much for sharing. Love this recipe.
