Going Meatless

I know this is not very popular in some circles. I personally gave up meat about five years ago. I don't suggest it for everyone, but it is the right choice for me. What I do suggest is to make one night a week meatless, like meatless monday. Now meat is expensive,both bugdet and calorie wise. For the same amount of money and calories you can eat a much larger quantity of veggies and grains. I have included some of my favorite meatless substitutions. Try them I think you will be surprised.

Now there are several meatless products on the market. Burgers, chicken patties etc. I like them all! But these are very expensive. sometimes even more costly than meat itself. So I try to be creative and make my own varieties at home. Purple hull peas make a great burger. Especially the leftover one that have road out the night in the fridge. Mash them up, add chopped onions,pepers. Try shredding carrots and add those. If you have some left over rice toss it in too. Mash all these together with and egg. Flour the patties lightly. Next fry them in s amall amount of oil. Fix it up just like you would a burger, it's yummy. One hint though don't tell the kids. Let them taste it so they will form an unbiased opinion. Who knows you might like a vegatarian lifestyle. My fiance said once when we were dating, "your the cheapest date to take out to dinner, I never have to buy you steak or lobster, just a baked potato and salad. Till next time Stay green
