Grandma's Old Fashioned Foodcake

This is a recipe that has been handed down for the better part of a century. In essence it is flapjack but not quite. It is brilliant warm with a cup of tea on a cold winters afternoon.



1-Cup Plain Flour
1-Cup Caster Sugar
1-Cup Rolled Oats
1 Cup Desiccated Coconut
1 tbsp. Syrup
25g Margarine
3 tbsp. Water
1 level tsp. Bicarbonate of Soda


Pre-heat the oven to 170C and line a 20cm spring form cake pan.

Blend all the dry ingredients, except the Bicarbonate of Soda, in a bowl. Melt the wet ingredients gently on the stove, when almost boiling add the Bicarbonate of Soda. As it is fizzing, fold the dry ingredients into the pan. Transfer to the baking pan and bake for 20 minutes.

When cooked, leave to cool for five minutes and then remove. It is easier to cut when it is still slightly warm. Enjoy!
