How to Make Hawaiian Oysters

Here in Hawaii, we like to cookout. In fact it is not uncommon for Thanksgiving to take the form of a good old fashioned BBQ. So here is a simple way to prepare some of the best oysters you will ever taste: “Oysters on the Barbee”, this recipe will be sized for eight large oysters and is proportionate based on number of oysters. You will need to get eight of the largest oysters possible. The best place to find them is at a fish market preferably in an Asian market.

1. In small pot melt a half stick of butter.
2. Add chop half cup of cilantro.
3. Add a cup and a half of soy sauce.
4. Squeeze three lemons, (Limes can also be used.)
5. Place your eight oysters on a preheated grill. Cook until you see the shell is ready to open.
6. While cooking the oysters, heat up the contents in your pot.
7. Stir your contents on a low fire do not bring to a boil. Now here is the secret, dip your finger in the pot. Take a tiny amount of the contents on your finger. It should be bitter to the taste.
8. Now add a tablespoon of sugar.
9. Repeat step 8, if needed add tiny amounts of sugar until you reach a level of sweetness desirable for your taste.
10. Keep contents of the pot warm.
11. With a proper tool shuck your oysters and place them back on the grill in an open shell.
12. Pour a liberal portion of your warm sauce onto each oyster.
13. When you see the sauce begin to boil, remove oysters from the grill.
14. Serve hot and enjoy.
