A simple and healthy sweet and sour chicken recipe

Sweet and Sour Chicken

This recipe is one that I have tried maybe hundreds of times and it's one of my favourites!

You will need:
Boneless chicken (generally 1 breast per person)
Chopped pineapple (I generally add a lot, but about 200g is good)
1 Red or yellow bell pepper
1 onion chopped into strips
Portion of brown rice or noodles for each person

Cook the chicken in a wok (or frying pan if you don't have a wok), then add the onions and bell pepper and stir fry for 2-3 minutes, finally add the chopped pineapple and stir fry for another couple of minutes. Finally add the sauce (recipe below) and cook for a further minute or so. Serve with the rice or noodles, personally I prefer noodles!

For the Sauce:
2-3 tablespoons of tomato puree
1/2 teaspoon garlic (puree or minced)
2-3 tablespoons of vinegar (I use either white wine vinegar or malt vinegar, it changes the taste slightly, but I like to shake things up a bit.)
Pineapple juice to sweeten

Combine the ingredients in a pan and bring to the boil, the sauce should thicken slightly, amounts of each ingredient can be changed slightly to your taste.
