Italian recipes: Grilled pizza for vegeterians and shrimps lovers

Have you ever tried barbecue pizza? It's really fun to enjoy grilling pizza and assembling it as you grill it. You need to be fast to avoid burning the crust. Grilled pizza can be cooked directly sitting on the grilling area. Cooking spray on the grill before it heats up helps the dough flip easy. We need to get a variety of grilling besides steak and chicken. Grilled pizza is good for vegetarians too, you can just add tomato, feta, mushrooms and olives

recipe and procedure followed to prepare the grilled pizza dough

To prepare the dough you need

4 cups white flour
1 tsp salt
1tsp sugar
1 tsp dry yeast
3 tbsp olive oil
1 3/4 cup warm water


1- Combine flour, yeast, sugar and salt in a bowl
2- Combine warm water and olive oil, then add to the mixture in the bowl and mix very well then knead until you get a soft and smooth dough.
3- Let rest for an hour covered in a warm place.
4- Cut the dough into equal parts (4 parts are OK) and roll out with a rolling pin to desired thickness.

Grilled pizza with shrimp and cheese

For this delicious pizza taste you need

1/4 cup extra-virgin olive oil

2 tsp minced garlic cloves

4 tsp minced fresh oregano leaves

Salt and ground black pepper up to taste

1 pound medium shrimp, peeled and halved lengthwise or small whole shrimps

2 cups crumbled feta or mozzarella cheese

1/2 cup diced green pepper

some olives rings

1- Prepare and shape the dough into 4 round or rectangular shaped pieces and put on the grill after you light it.
2- Combine 1/4 cup oil, garlic, 2 teaspoons oregano and salt and pepper to taste in a small bowl.
3- When the grill is medium-hot, brush some plain olive oil over each stretched dough.
4- Gently flip the stretched dough onto the grill, oiled-side down. Grill until grill marks appear for 1 to 2 minutes.
5- Spread shrimps, green pepper, olives then put cheese on top.
6- Cover each pizza with a baking tray and grill until the pizza bottoms are crisp and browned, the shrimp are pink and the cheese melts. It takes 2 to 3 minutes.

Pizza for vegetarians

2 cups tomato sauce
1/4 cup tomato paste
A mixture of garlic, oregano, basil, rosemary, salt, pepper up to taste
2 tomatoes, sliced
1/2 red pepper, sliced into strips
1/2 yellow pepper, sliced into strips
sliced mushrooms
1/4 onion, sliced
2 handfuls of spinach
1-2 cups mozzarella or feta cheese
1- In a medium bowl, combine the tomato sauce, paste, and spices.
2- Prepare all the ingredients and arrange on a platter for easy and quick assembly.
3- Heat the grill and grill the dough as mentioned before.
4- Add sauce first, then the rest of the ingredients with cheese and tomatoes last to prevent everything else from drying out.
5- Cover with baking trays and grill for 2-3 minutes or till they browned and crisp.
