Moist Carrot Cake

Healthy, simple and easy to make. You will never get wrong with this flavorful, delicious and moist carrot cake that is good enough to eat even without any frosting!

Moist Carrot Cake

    Ingredients and Procedure:

  1. Pre-heat your over into 350 degree Fahrenheit.

  2. In a large mixing bowl, sift together 1 1/2 cup all purpose flour, 1 cup granulated sugar, 1 teaspoon baking powder, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, 1 teaspoon nutmeg and 1/2 teaspoon salt. Mix until well combined.

  3. In a separate bowl, beat on high 2/3 cup vegetable oil and 2 eggs (one at a time). Add in 1 cup grated carrots, 1/2 cup crushed pineapple together with its juice and 1 teaspoon vanilla extract.

  4. Add the dry ingredients with the wet ingredients and mix until well combined using a spatula. Add in 1/2 cup of walnuts and 1/2 cup of raisins. Mix until the nuts and raisins are well incorporated.

  5. Put your mixture into an 8 inch round baking pan greased with oil (bottom and side). Bake it for 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove from the oven and let it cool completely before removing the cake from the baking pan. Serve.

    Tips and Tricks!
  • If whole meal flour is available, use it instead of all purpose flour.
  • Fresh grated nutmeg give better flavor and aroma than the store bough packed ground nutmeg.
  • You may add your own choice of nuts according to your preference.
  • Serve it with a dust of confectioners sugar on top or frost with a creamcheese frosting if desired.
