My favorite Christmas baking part 2: Two treats made of nuts

I love to bake and cook. I make sure I bake for each holiday and when the family wants a treat. I am giving the second part of my series on what I bake. These two cookies have nuts.

Pistachio and Lemon crescent Ingredients

  • 2 cups confectioners sugar
  • 2 Tablespoons softened unsalted butter
  • 1 Tablespoon lemon juice
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 2 teaspoon lemon zest grated
  • 1 cup pistachios unsalted and shelled
  • 1/2 teaspoon vanilla extract

Directions pistachio lemon crescents


  • 1/4 cup of the confectioners sugar and pistachios should be pulsed until finely ground in the food processor.

  • 1/2 cup confectioners' sugar, vanilla, lemon juice, lemon zest, butter, and vanilla extract all these ingredients need to be beaten until they are light and fluffy on medium speed of an electric mixer.

  • The oven should be turned on and have it preheat to 350 degrees.

  • Directions part 2 pistachio lemon crescent

    • Put flour on your hands preparing them for getting teaspoons of dough and rolling them.
    • They should be rolled into a three 3 inch ropes.

    • The ropes should be shaped into crescents.

    • These crescents go on ungreased baking sheets

    • Then these should be in the oven until the edges and bottom become lightly browned that takes approximately 14-16 minutes.

    • Don't take the cookies off the sheet and put the sheet on a rack and allow to cool just a little bit.

    • Then and take them off the sheets.and place them on the wire rack.

    • Let the stay there until they are no longer hot, just warm.

    • When the cookies become warm the cookies all the cookies should be picked up gently.

    • Coat the cookies in gently in confectioners sugar by rolling them into confectioners' sugar enough until coated.

    • Then put the cookies after rolling them in confectioners' sugar on the rack until they entirely cool.

    • If you need more of the confectioners' sugar, they should be rolled again.

    Spiced Almond Diamonds Ingredients

    These are one of my extended family's favorites. I get a request to make these even when it is not a holiday the family loves them so much.

    • 3/4 white granulated sugar
    • 1 teaspoon vanilla opinion
    • 1/2 teaspoon ground allspice
    • 1/4 teaspoon salt
    • 1/8 teaspoon ground nutmeg
    • 1 egg that is large
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon almond extract
    • 1/2 cups all-purpose flour

    Ingredients for topping of spiced almonds diamonds


  • 1 1/3 almonds that are blanched and sliced
  • 1/4 cup decorating sugar that is coarse and white
  • Use the white is from the large egg that is beaten with 1 Tablespoon water

  • Directions

  • Put your oven and put the heat on 350 degrees

  • A baking sheet that is rimmed and 15 inches by 10 inches and lines with foil

  • Each end of the sheet should be 2 inches over it.

    Directions for the Spiced almond diamonds


  • All the ingredients with exception of flour.

  • All those ingredients should be put in a bowl that is large then use an electric mixer and blend the ingredients using medium speed

  • Now the flour to be added and beaten in doing it slowly at the low speed until it is well beaten at low speed.

  • The dough should be on the bottom of lined pan. When you line the pan have the hand coated on your hands.

  • The recipe has to bake until the nuts become toasted, and the edges are golden in color

  • m For the recipe should be baked as described it will take approximately 32 to 34 minutes to have it baked like that.

  • When it is still hot move it to a cutting board cutting it should be cut into strips with the dough lengthwise into six 1 1/2 wide inch strips. Then each of the strips should diagonally be cut into six diamonds.

  • These diamonds should be allowed for five minutes to be cooled on the cutting board after those 5 minutes then the diamonds be cooled entirely on the wire rack.
