my dads lovely jamaican recipie, curry chicken. My best jamaican meal.

Nice Jamaican Curry Chicken Recipe

MAKES ENOUGH FOR ABOUT 4 PEOPLE.

First off here is a list of things you will need:

A thick pot or a dutch pot

four or five skinless chicken breasts.

dried thyme

ground black pepper

2 onions

1 cleg of garlic

about 4 fresh tomatoes

1 tin of coconut milk

chicken seasoning

curry powder, mild, medium or hot depending on taste.

fresh chili

salt

cooking oil

2 or 3 carrots.

1. PREPARATION - MARINADING
FOR BEST RESULTS ITS BEST TO MARINADE OVERNIGHT BUT YOU CAN COOK WITHOUT DOING SO.

Start the preparation the night before you intend to cook the curry, you need to wash the chicken breasts and chop it up into chunks then put into a big bowl, like a mixing bowl, then you need to add the chicken seasoning to the chicken so that every piece of chicken is covered, be careful as some chicken seasoning can be very salty, do the same with the curry powder, cover every piece of chicken.

Chop the fresh tomatoes into quarters and add to the bowl.

If you like your curry to be very hot then add a lot of curry powder and if not don't add so much.

Add half a teaspoon of black pepper, salt if you please and about 1 teaspoon of the dry thyme

chop or crush the garlic and add.

chop or slice the two onions and then add it to the bowl of chicken, mix all of the ingredients together, making sure that all the chicken is covered.

cover with cling film, or a plate or something.

place the bowl in the fridge.

2. COOKING.

Peel , wash and chop the carrots and sweet potatoes and place in a bowl.

Cover the bottom of the dutch pot or thick pot with oil and then put on the hob and turn it on, the aim is just to pre heat the oil for a minute or two.Set to electric or gas mark 4.

Whilst you are waiting for the oil to heat up , boil the kettle and get the bowl of chicken from the fridge and remove all of the seasoning from the chicken, i mean remove the tomatoes, onion and garlic, as it may burn during the next step.

Next you need to add the chicken to the pot and brown it, to do that you just basically fry it all over until it is more brown. The aim is just to make the outside of the chicken appear darker not to fully fry the inside of the chicken.

Now whilst the chicken is browning you need to get the bowl that the chicken was in and add the tin of coconut milk to it, mix it around so that any left over curry powder is mixed into the milk and all the onions and tomatoes are not stuck to the bowl. Add the carrots and the sweet potatoes. add some chopped chili or dried chilli, its up to you how much you use, according to taste.

Once the chicken is all browned you need to add the contents of the bowl to the pot and mix it in a little with the chicken, then you need to pour the boiling water from the kettle into the pot, just enough so that the chicken is submerged under the water. SO you may not have to use all of the water in the kettle.

cover the pot with a lid.

Keep the gas or electric mark setting to 4 and bring to the boil.

Once it is starting to bowl turn the gas or electric mark setting down to about 3 or 3 and a half and let simmer for about 45 minutes to about a hour.

check the pot often give it one or two stirs with a wooden spoon to check its not sticking to the bottom of the pot, if it is sticking turn the heat down a little.

as the curry starts thicken and the water starts to evaporate, you need to turn down the heat gradually until the curry has reached the consistency that you like.

Once it has reached the consitency you like you can turn off the cooker and enjoy with rice or couscous or whatever you like.
