This is the first of many noodle recipes to come on this page. Experience my personal ramen meal (version 1.0).

Fast and easy awesome noodles: Creamy Mushroom Ramen

This is the most common version of my noodles; it was created through a great amount of experimentation, extreme hunger and creativity through limited ingredients.

Noodle dish 1.0
Creamy Mushroom Ramen

1 packet of noodles
2 slices of cheese
Pinch of salt
Pinch of grated nutmeg
Pinch of black pepper/cayenne pepper
1 teaspoon white sauce powder/ mushroom soup powder
1 teaspoon Spice for Rice
1 teaspoon Chicken spice (optional)
1 teaspoon Italian herbs
1 teaspoon crushed thyme
1 sprig of parsley
1 small clove of garlic
1 tablespoon of Mayonnaise
1 tablespoon soya sauce
1 tablespoon of sesame seeds (preferably roasted)
½ an onion
¼ green bell pepper
¼ red bell pepper
5 button mushrooms
1 German Vienna/ chicken Vienna/ veggie sausage (chopped)
500ml hot water

Boil the 500ml of water and open the packet of noodles. Don’t chuck the flavour; you may need it if it is mushroom or chicken seasoning. Break the noodles in half in the pot, put the seasoning over it, pour in the hot water, then partially cover the pot with the lid and wait for it to boil on the highest heat setting.
If your sesame seeds are not roasted you should fry them separately in a slightly oiled saucepan until they pop. The pros fry it without oil. But don’t do that, it will burn.

Chop your onion, green pepper and red pepper into little cubes. Slice the mushrooms; you don’t want them too small because they shrink while cooking. Crush the garlic with the side of your knife, this releases the flavour, only then you may chop it finely. Once the noodles have boiled lower to medium heat, add the vegetables to the pot and stir.

Sprinkle the white/mushroom powder over the noodles evenly and stir carefully as not to clump. Add the salt, chicken spice, nutmeg and spice for rice. Rub the thyme and Italian herbs in your palm and then add it to the pot as well. Add the chopped Vienna, stir slowly and leave to cook for 5-10 minutes on medium heat.

Put the noodles in a bowl and mix in the mayonnaise and soya sauce. Place the slices of cheese on top of the noodles in the shape of an X while the dish is still hot.

Grate the black pepper over your dish, sprinkle it with the roasted sesame seeds and then you may place your last item of garnish, the parsley, in the middle of the noodles, on top of the cheese.

This is my favourite homemade ramen dish. (I just call it ramen because it sounds somewhat ‘gourmet’; more so than noodles anyway). Enjoy it.
