Peanut Butter Doughnuts

Incorporating chunks of peanut butter into your dough is another level of making a doughnut. And adding a peanut butter glaze will really enhance the peanut butter flavor of your doughnuts. Perfect pair for grape soda, tea or coffee.

Peanut Butter Doughnuts

Ingredients:
1/4 tsp salt
1 large egg
1/2 cup buttermilk
1/2 tsp baking soda
1 tsp baking powder
Vegetable oil for frying
1/2 cup granulated sugar
1 3/4 cups all purpose flour
1/3 cup + 1 tbsp chunky peanut butter

    Procedure:

  1. In a large mixing bowl, cream together the peanut butter chunks and sugar until smooth (about 4 minutes). Add the egg and beat until well combined. Add in the all purpose flour, baking powder, baking soda and salt. Mix until just combined. Lower the speed of the mixer and gradually add the buttermilk. Mix until just combined.

  2. Line your counter with a sheet of parchment paper and scrape the dough onto it. Cover it with another sheet of parchment paper.
  3. Flatten and roll the dough into 1/2 inch thick using a rolling pin.
    Place the dough into the refrigerator and let it sit for around 30 minutes to an hour.

  4. Heat at least 2 inches (high) of vegetable oil in a deep pot or fryer until the thermometer reaches 370 degree Fahrenheit. Prepare a baking sheet lined with kitchen or paper towels and baking sheet dusted with flour.

  5. Remove the parchment paper from the dough and dust it with flour. Using a round biscuit cutter or doughnut cutter, cut the dough into 3 inches round and place them on the baking sheet dusted with flour.

  6. Fry the doughnuts for about 1 to 2 minutes per side. Drain on the prepared kitchen/paper towel.

  7. (Optional) Dip the top side of your doughnuts into the peanut butter glaze and place them onto a wire rack. Sprinkle with chopped peanuts. Serve.

Peanut Butter Glaze:
Mix 1 cup confectioners' sugar, 2 tablespoons creamy peanut butter and 3 1/2 tablespoons whole milk into a small bowl. Mix until smooth.

Tips and Tricks!
Doughnuts can be stored at a room temperature for 6 hours only.
