Potato and Ham Soup with Tarragon

This is a simple soup recipe you can prepare in minutes.


1 1/2 tbsp butter
1 medium size onion, chopped
1 1/2 tbsp Chopped fresh tarragon
1 cup chopped potatoes
2 cups broth
1/2 cup minced ham
Salt and peper to taste
1 cup milk
1/4 cup croutons


In a pan, melt butter. Add onions and tarragon and cook until onions are translucent. Add potatoes and broth. Cook until the potatoes are tender.

When potatoes are tender, transfer to blender and puree until smooth. Return to pan and add minced ham. Season salt and pepper. Add milk.

Serve warm and add some croutons.
