Rava idli recipe is an instant breakfast dish where there is no grinding, fermenting that is usually needed to prepare a rice idli. So if you don’t have an idli batter ready in hand, then using rava to prepare soft and fluffy idli is a great idea. You can use fresh curd to prepare this. Let’s take a look into the recipe in details:

Take a cup of rava or sooji. Heat 2 tsp of oil in a pan and add the rava and roast it till a nice aroma is released and the color changes to light brown. Keep stirring continuously when roasting them as it may burn very easily.
Remove the roasted rava in a bowl and let it cool. In the same pan, heat 1 tsp of oil and fry the cashew nuts and remove it in the bowl containing the rava. In the same oil, add a tsp of mustard seeds, curry leaves, one tsp of chana dal and a pinch of asafoetida. Add this mixture to the roasted rava and also add curd with chopped green chili, ginger and salt. Add water according to the requirements and prepare a smooth batter that is not too thin or too thick.
Leave the batter aside for 20 to 30 minutes and allow the rava to absorb water. Check the consistency, if the batter is too thick, then add little water to get a medium consistency.
Heat water in a steamer or pressure cooker and grease the idli moulds. Add a pinch of fruit salt to the batter and mix well. Pour the batter in the moulds and place the stands in the cooker and steam it for 10 -12 minutes without putting the whistle on.
Check the idli using a tooth pick and it should come out clean. Allow it to cool a bit and remove the rava idlis from the mould and serve them with coconut chutney and sambar.
