Recipe for Rice Porridge

Rice porridge is the easiest and simplest dish to make there is. It’s right up there with making a sandwich and boiling eggs. Unless you don’t know how to do either one as well, in which case, you’re in trouble.

This is one of my favourite foods to eat for these reasons : It is easy to cook, and requires minimal supervision. It also tastes great, and fills the stomach. It is nutritious, and a great source of energy.

Let’s start with the most basic ingredients: rice, chicken stock and a pinch of salt. Just with these three ingredients, you can make a tasty rice porridge dish, albeit simple.

But if you are adventurous and want to experiment, or simply because you want more texture, taste and content, then you can add whatever you like. Here’s what I like to add: a potato, a tomato, garlic, an egg, chunks of meat (chicken or pork is best), and ground pepper for extra taste.

It doesn’t really matter what type of rice you’re using - your preference being determined by health, price or availability, among others - so long as you know the length of time required to cook it until it is soft. With porridge, you want texture and fluidity in content, as opposed to cooking ‘dry rice’ which also requires a bit more ‘finesse’ in the method. To cook:

Put the rice, potato (chopped into medium-size pieces) garlic and chunks of meat in a pot, then pour a generous amount of chicken stock to cover it. Put it to a boil, then once it is boiled, turn down the fire and let it simmer gently until the rice is tender and soaked up most of the fluids. It usually takes between 15-30 minutes, depending on what type of rice you’re using. Check it once in a while to make sure the liquid does not dry up. Once the rice is tender, add in the egg, tomato (sliced into pieces), salt and ground pepper; cook for a few minutes, and it is done. Let it cool for several minutes and then serve.

Once again, the ingredients:
Rice (one cup, for 1-2 persons)
Chicken stock
Potato (one, cut into medium-sized chunks)
Chicken or pork meat (cut into medium –sized chunks)
Tomato (one, sliced into pieces)
An egg

Cooking time: 30-40 minutes
