As well as making a tasty snack for two, this easy, quick recipe can make a good vegetarian main course when served with salad and variety of breads.

Savoury Potato Slices

Savoury potato slices

A simple recipe suitable for all the family to enjoy. Savoury potato slices make an excellent snack or served as a side with fish or chicken mains.

Ingredient
2 medium potatoes
1 medium onion
Mild curry powder
2 tablespoons of extra virgin olive oil
Sea salt

Method
Begin with washing the potatoes, leaving the skin on, slice into thin crisp shapes.
Rinse the potatoes again and pat dry with kitchen roll.

Peel the onion and chop finely.

Heat the olive oil in a large frying pan, add the onion and half a teaspoon of curry powder. Cook for 1 minute.

When the onion is lightly browned add the potato slices and cook for another 4 minutes on each side. Add a pinch of sea salt.

Tip:
Serve with salad, ciabatta and chicken as a low fat alternative to chips. Or as a vegetarian dish, with salad, seeds and nuts.

(Makes 2 servings)
