Stay Cool! Key Lime Pie

This is my favorite pie recipe of all time. It's quick easy and no baking involved.

The easiest Pie You'll Ever Make

I am not a big fan of sweets. Most of the time I find them too rich, and too heavy. My husband however, grew up thinking that desert was simply the final course of every evening meal. I, on the other hand have always been one that has to watch what I eat. So over the years I have tried to partially eliminate desert(like it's a four letter word, ha ha). But, to spoil the man in my life I have began making sweets frequently.
This recipe is perfect for a lazy, corner cutter like myself. It has very few ingredients, no baking, and a very short prep time.
Key Lime Pie
Ingredients: 1 package Philadelphia Cream Cheese
1 8oz container of whipped topping (cool whip)
1 tablespoon powdered sugar
1/2 cup key lime juice (the concentrated kind, not fresh)
1 grahm cracker crust
Optional.....2 grahm crackers crumbled for garnish

In a large bowl mix cream cheese, whipped topping, powdered sugar, key lime juice, and blend with a blender. You can mix this all by hand if you don't have access to a mixer, but it sure will save time and muscle power if you mix it. It will usually take 2-3 minutes, just till it gets really smooth and lite. You should taste it now so if you prefer it more tart you can add a bit more key lime juice. I also recommend that you use regular cream cheese. The fat free and low fat versions don't mix as smoothly, and they don't set up. The pie will remain liquid, more like a mousse. Yuk! After you've mixed simply spoon into your grahm cracker crust. With your spoon smooth it down ( this mixture is rather thick). You can garnish with grahm cracker crumbs, or a twist of lime. Refridgerate for 15- 30 minutes. This pie is lite, creamy, and cool! The perfect companion for summer. Best of all, you don't even have to heat up the oeven.
