Two healthy and delicious snacks using coconut milk (Suman and Maja Blanca)

Coconut milk is a delicious and nutritious ingredient in many Filipino snacks. Here are two Filipino snacks that I have modified a bit to lessen its calorie content and increase its nutritional benefits.

Suman (Rice Cake)

Ingredients:
- 2 cups malagkit (glutinous rice)
- 2 cups coconut milk
- 5 tbsp. honey
- 3 tbsp. cocoa powder
- 1 tsp. cinnamon powder
- 1 small piece ginger root
- banana leaves

Cooking Procedure:

1. Wash and soak the rice for at least 3 hours; drain.
2. Peel and smash the ginger root; cut in small pieces.
3. Cook the rice with coconut milk in medium stand, stirring constantly.
3. Add the honey, cinnamon powder and ginger root.
4. When the mixture turns thick and there is no more visible liquid, turn the furnace in low stand. Set aside one-half of the mixture.
5. Add the cocoa powder in the remaining half and stir to thoroughly mix.
6. Turn off; set aside to cool.
7. Place 1 tbsp. of each half of the rice mixture (half with cocoa/half without cocoa) on a banana leaf. Lay your sticky rice mixture the same direction as the lines on your piece of banana leaf. Roll this over the top of the sticky rice mixture and press it firmly to make the mixture elongated and solid. Fold the end flaps. Repeat procedure with the remaining rice until all is wrapped.
8. Arrange the suman in a steamer and steam for 40 minutes. Turn off and let cool in the steamer.
9. You can freeze your suman and reheat them by steaming or by microwave.

Maja Blanca (Corn Flan)

Ingredients:
- 3 cups coconut milk
- 1 can creamed corn
- 1 cup cornstarch
- 5 tbsp. honey
- 1 tsp. cinnamon powder

Cooking Procedure:

1. Cook coconut milk and cornstarch in low heat, stirring continuously.
2. Add honey and cinnamon powder.
3. Add the corn.
4. Stir continuously until thick.
5. Transfer to a greased container and even out the top surface. Let cool.
6. You can add toasted coconut shreds as toppings.
7. Refrigerate to firm up the flan.
8. Serve cold or at room temperature.
