Vegetarian Style Lentils, in a Spicy Tomato Gravy & Fried Cheesy Tortillas.

I was cleaning around my herb garden today. When I came in the house and sat at the computer. All I could do was smell the aroma of Thyme, this recipe was then born.

How do I come up with these Recipes?

Sometimes it is as simple as just the smell of some herbs. Other times, the recipes come to my mind as I am watching cooking shows on TV, while getting my education on different herbs, spices and cooking techniques. It is hard to come up with new recipes.

I mean there are so many people that post recipes on the internet, then you have the stars of TV but, with a bit of determination and seeking the knowledge, it will break you out of the, well someone must have already made it, so why go out of my way mode.

I also put this recipe in the American category and the reason why is, it came from the inspiration of a southern staple called tomato gravy. Also, it was made here in an Alabama USA kitchen and by American grown ingredients.

I am also just using a mish mash of spices, herbs and ingredients and I don't want a purist to think I am claiming one thing, when they think it is another. Oh, and yes, it is also cooked by an American made woman.

Ingredients

Lentils
1/2 pound dried lentils
1 onion
bay leaf
3 sprigs of thyme
1/4 teaspoon red pepper flakes
2 teaspoons salt
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
5 cups of water

Tomato Gravy
3 medium size onions
2 cups grape tomatoes (preferrably, homegrown)
1/2 red bell pepper
1 cup corn (frozen or, cooked and taken off the cob)
1 cup vegetable stock
1/2 cup tomato puree
1 can green chili (diced)
3 tablespoon olive oil
6 basil leaf
1/4 teaspoon red pepper flakes
1/2 Teaspoon ground chipolte pepper
1 teaspoon smoked paprika
1 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon Salt (I prefer sea salt)
1/2 teaspoon black pepper
1 tablespoon honey and orange zest compound butter

Fried Cheesy Tortilla's
1 cup Grated Parmesan
4 green onions
8 flour tortillas
olive oil

Cooking your lentils

Sort and rinse your Lentils and set aside. I use at least one 1 teaspoon of salt in the water, while cooking my lentils.

Some people find that their beans get tough if they use salt while cooking, I do not find this a problem.

Place your pot on a medium high. Add one tablespoon of olive oil.

Dice your onions, use a good size dice, as they will be cooking for a long time. Add to your pot. Saute for 1 minute. Just so you are able to release some of the onions natural oils.

Add your sprigs of thyme to your pot. Then start adding your spices.

Red pepper flakes, onion salt, garlic powder, bay leaf, salt and black pepper.

Place 5 cups of water in your sauce pan.

In the Hot Tub they GO

Add the lentils to your pot.

Bring to a boil, cover your pot and turn your burner down to a simmer.

Cook your lentils, as directed on the back of the package.

Mine cooked for 30 mnutes.

When your Lentils are done, drain any water that is left.

Discard your Thyme and onions.

Add one teaspoon of salt, stir and set aside

Making your Jazzed up Tomato Gravy

Peel your onions, cut in half and then cut your onions into 1/2 inch slices.

Place your onions in a fry pan on medium/low heat, with 2 tablespoons of olive oil. Cook until they are a golden brown. About 15 to 25 minutes. Stirring every now and then.

In the meantime, Dice your red bell pepper in a fairly small dice. Cut your grape tomatoes in half, set aside.

When your onions are golden brown. Make a well in the middle, add 1 tablespoon of oilve oil and add your red bell pepper. Saute for about 2 minutes. Stirring the whole time.

Then add, ground chipolte pepper, smoked paprika, red pepper flakes, salt and pepper. Saute for about 1 minute. Until you can smell the spices.

Add your vegetable stock, tomato puree, green chili and basil to your pan. Cook for 5 minutes on medium high heat.

Then add your tomatoes and corn. Cook for one minute. I discard the basil, as it has served its purpose and the basil will have turned a dark unappealing color.

Almost to Gravy Town

Combine your tomato gravy with the lentils and refrigerate overnight. This gives the lentils and vegetables time to marinate and soak up all the goodness.

The next night about 2 hours before supper, take out the lentils and tomato gravy and place your bowl on the kitchen counter.

By allowing the lentils and tomato gravy to come to room temperature, you will not be over cooking them when you heat them back up and what stew of sorts is not better the next day..

Place your lentils and tomato gravy into a fry pan and bring just to a boil and then, add your 'cold' compound butter.

Stir your compound butter as it is incorporating into your sauce, as it will then leave a more velvet texture.

Then serve it next to...

Fried Cheesy Tortillas

Grate your parmesan cheese. Slice your green onion, grab your flour tortillas and then place on a board or a tray. You are now ready for assembling.

Place one flour totilla on your board, add parmesan cheese and diced onion. Top with another flour tortilla.

In a fry pan, on medium high heat, add 2 tablespoons of olive oil. When your pan is hot and before the oil comes to the smoking point...

Place your cheesy tortilla in the fry pan, turning once. Cook to a golden brown. Drain on a cooling rack. This will help keep your tortillas crispy.

If you would like your Tortillas a bit more cheesy or want a more onion flavor, by all means add as much as you would like. This is how I like mine.

This years First Recipe from the Garden

When the butter is incorporated, spoon the lucious goodness in a bowl. Just because you might have stopped eating meat, there is no reason why you still can not have a buttery pile of mashed potatoes. Add a few pieces of these crunchy, fried cheesy torillas and then you have a very balanced and enjoyable supper.

These are the first of our grape tomatoes that we have growing in our garden. Well, it is the first amount that was enough to make it inside the house and not in our mouths, as we were walking in back from our garden.

If you do not like wheat, then use corn tortillas or serve these lovely lentils on a bed of brown or wild rice.

If I lived in Alabama, I'd be knocking at your door at dinner time. :) You should create a cookbook, Denise. I love all of your cooking ideas. Thank you so much for sharing them. I have red lentils in my pantry and everything else, except the ground chipotle pepper. Maybe I could substitute a little ancho chili in adobo sauce. I will be making this one very soon! I have no big production company, we eat the food cooked. I can promise you though, they have had to deal with some duds but, I didn't publish those.LOL

Awww Thank you Delicia. You know I am not a vegetarian but, I do trade out a lot of my meals for just that. Lentils seem to be my favorite food now a days. I know I must seem weird. My mama use to say, "Denise you are the only kid that goes crazy over a homegrown tomato, more so than a bar of chocolate.". She is right.LOL
I am sorry you haven't been able to sleep. I have been a insomniac for decades now and I hate those nights. I hope you had some sleep and a wonderful day today. I must go give my Auntie her present. I don't see why not. Just cook the beans as if you would normally do, just adding the spices. I do thing like this with different kinds of beans. The reason I picked lentils is, I love them and also, the flavors go so well with the lentils. I would just recommend you use a creamier bean (as far as texture) than a more dry bean like a kidney bean or a lima bean. Thank you for stopping by.:)

Girl, I made a batch of these lentils, I had them that night for supper and then the next two afternoons for lunch, the men went for the ribs (I made the last 3 recipes in 1 day) and then when the ribs were gone. Dan had a bowl of the lentils, he told me they were great and that he would love some for his lunch the next day and I said, oh well, the rest will be gone by then. He then whined and said "Well I only had one bowl and I didn't know it would be so good.", I told him tough beans, you snooze you lose. he didn't seem very happy, oh well.LOL

Hi Judy, thank you for your kind words. I am so happy you like my dish. I just love lentils and I try to prepare them in a lot of different ways, it is such a super legume. Thank you for following me, I really appreciate it. Please have some patience with me, as my computer was fried some months back and I will not be able to back here at wikinut full time, until the first week of November, if everything works out just right. I will then be able to get another computer. My son allows me to use his a few hours a week and his is very old so, I am only able to do very little work on it. No I do not have a book out, yet. Right now I am in cyberspace hell of some sort. I fried my PC and I am now using my son's laptop that is also on the way out. So I can not even publish here. Also, I lost so many pictures (around 400) that I was going to use for articles. When my computers motherboard was fried. What ever that means. LOL
I started here at wikinut back in July (?) 2010. The last grade I finished was the 7th grade. I knew I had a lot to learn. My first 25 articles (they have since been edited) were crap so, I decided to take this time as a so called 'school done my way' kind of thiny. So I must get back to work, when my new computer is also up and running, so I am able to improve my craft and then start publishing books also. Not only cook books though. When I am able to get back full time, I figure I will have just started my senior year and so I still have a year of studying to do.
I am so sorry I missed this post and it has taken me so long to answer. My son works two jobs in sales and they have their big shopping days coming up for black friday. So I have had the priviledge to have been able to use it for that last 3 or so days. Usually, I only get half a day or on rare occasions two days a week. Thank you for your kind words.
