I am a vegetarian and have many recipes that are vegetarian that I thought I would share. These three are three that make fine food. I will continue ti post until I run out of recipes I will be eating Vegan in 2016, but I will occasionally show up with just a vegetarian recipe and will share some vegan recipes as I prepare to go vegan

Ambrosia Citrus Salad Ingredients


  • 1 jar ( 1 1/2 pounds) citrus segments refrigerated with juice
  • 3 Tablespoons olive oil
  • 2 bags mixed baby greens each bag should be should be 5 to 6 ounces each
  • 1 to 2 limes
  • salt and black pepper
  • unsweetened coconut flakes

    Ambrosia Citrus salad Instructions

    The unsweetened coconut flakes should be put in a single layer in a jelly roll pan that is 15 1/2 inches by 10 1/2 inches and toast the coconut.The toasting of the coconut should take until the coconut is a golden color. It takes approximately takes 3 minutes but coconut can quickly burn and after two minutes to see if it doesn't burn yet. Then at 3 minutes check it again and it should be perfect.

    1/4 teaspoon salt and 1/8 teaspoon coarsely grated ground black pepper should be whisked into the oil in a thin steady stream until blended.

  • The greens are to be added to the dressing these should be coated by tossing them together to coat.

  • The dressed greens should be arranged on eight plates for salads. The salad greens should be topped with citrus segments and coconut flakes.

  • When you go to buy the unsweetened coconut flakes these are pieces of the coconut that are shaved and dressed that can be found in specialty food stores or local supermarkets

    Cranberry Pineapple Chutney


  • 1 ripe pineapple
  • 1/2 chopped small red onion
  • 2 oranges navel type
  • 1 seeded and minced jalapeno chile
  • 1/2 cup granulated sugar
  • 2 Tablespoons fresh ginger
  • 1/2 cup cider vinegar
  • 1 cup cranberry dried

    Cranberry-Pineapple Chutney Instructions part 1

    Use one orange and one teaspoon of the peel should be grated off it. Then both oranges should have the pith and peel shared be removed from each navel orange. Then the oranges should be cut into pieces that are 1/2 inch pieces.

    The pineapple should have bottom and crown on the pineapple. Then cut off the eyes and rinds. The pineapple should be cut into quarters in lengthwise directions. The center core is tough so trim it and throw it out. In 1/2 inch chunks, the pineapple should be cut.

  • Orange peel and pieces should be added to a 4-quart saucepan.

  • Jalapeno, cranberries, onion, pineapple, sugar, ginger, vinegar, and 1/2 teaspoon salt should be added to 4-quart pot. Stir the mixture on medium-high, the mixture should be heated. Cook 20 minutes or until thickened while occasionally stirring it

  • Can refrigerate and save for one week.

    Accordian Potatoes Ingredients


  • 8 red potatoes that are big these should be 8 ounces each
  • 1 Tablespoons parsley leaves
  • 1 Tablespoons parsley leaves
  • 1 teaspoon thyme leaves that dropped fresh
  • salt and pepper
  • 2 Tablespoons olive extra virgin type

    Accordian Potatoes Instructions


  • Turn on your oven and let it preheat to 450 degrees.
  • Each potato should carefully be sliced into slices that are thin but don't cut through
  • On a microwavable safe dish covered by wax paper should have the potatoes put on them.
  • Cook it on high 12-15 minutes in the microwave. Cook until you can pierce it with the tip of the knife easily.

  • After the microwavable the potatoes should be placed on a metal baking pan. In the slices of potatoes. The extra virgin olive oil should be drizzled in them.

  • 1/2 teaspoon salt and 1/4 teaspoon black pepper that is coarse should be sprinkled with the oil.

  • The potatoes for 25 minutes they should be roasted in an oven until lightly browned for 25 minutes. The potatoes should be moved to the platter and sprinkled with herbs.
