Sometimes I need a tasty and inexpensive meal, and this is just some of my ideas.

What I do with My Leftovers.

I was brought up to believe you should never waste food, and to this day, I cannot bear to throw anything away. After all, wasted food is money wasted, and now we are in the midst of a recession, there is even more reason to try and economise.

Left over vegetables can either be added to a chicken or stock cube of some sort for a delicious soup. There is no measuring to be done, just add the cube to a quantity of water, add some herbs for extra taste, any that you like, and there you have a delicious and nourishing soup. You can thicken it if you like, or just have it as it is. This is particularly useful for someone who is not well, and cannot face bigger meals.

Another way to utilise your vegetables, is to cook some pasta, then add your favourite sauce to it, and lastly add the vegetables. Sometimes having a vegetarian meal makes a pleasant change to eating meat, and can be very beneficial to our health.

These are meals that cost next to nothing, but are filling and satisfying. Try them and see for yourself.
